Dan Dan Mian as known as Dan Dan Noodles is signature Sichuan street food in Sichuan, China. Traditional dan dan noodles doesn't have much of soup but mostly just spicy bold flavor sauce. If you're not familiar with Dan Dan noodles, they are spicy Chinese noodles with a dark sauce that usually contains preserved vegetables, chili oil, minced pork (I'm using chicken), and green onions.
Instructions to make Dan Dan noodles:
- Make the sauce by mixing all ingredients together. Set aside
- Chop everything: onion, garlic, mushrooms ready.
- Cook the noodles as per the instructions on the packet and drain the water away.
- In a frying pan add some sesame oil and cook the mince meat breaking it up as you go along. Cook until it’s turned a lighter colour (seared). Add the onions, garlic and mushrooms and cook for another few minutes. Add 1/2 sauce and cook it through until the meat caramelised. Add 2/3 teaspoon of chilly oil
- In a pot prepare the broth and add the rest of the sauce. Bring to a simmer and add the spinach for a minute and the noodles so that they warm up.
- Serve in big bowls starting with ladling the broth. Add the meat on top and finish with the spring onions and some more chilly oil
