This is an easy recipe that is guilt free. Variations: Peanuts, sesame seeds, cashews, roasted edamame, pretzels, rice crackers, wasabi peas, coconut, raisins, almonds, pecans etc etc Spicy puffed rice is prepared by seasoning puffed rice with some spices. I used green chilies as I like to bit the chilies along with the puffed rice. I used peanuts here but can be substituted putnalu (fried chana dal) or can use both.
Instructions to make Spicy Puffed Rice | Murmura Chivda | Khara Mandakki:
- In a small kadai, heat oil on medium flame. Add mustard seeds & cumin seeds. Allow to splutter. Lowder the heat and add curry leaves, whole red chillies & asafoetida.
- Add the roasted split chana and almonds. Traditional recipe is made uusing peanuts. Due to dietary constraints of my family, I substitute it with almonds. You may chose either one of them.
- Saute until fried gram is slightly golden brown and almonds start swelling and cracking up slightly.
- Turn off heat. Add the crushed garlic. Heat of the oil is enough to cook the garlic.
- Add red chilli powder. Mix well.
- Pour the seasoning over the puffed rice. Add salt & sugar.
- Mix well on low heat so that the puffed rice becomes crispy & crunchy. Check the spices and adjust according to your taste.
